Three rounds spotlight lean tuna, fatty tuna, and wagyu. Order as many pieces as you like up front—servers will remind you: no returns, and $10 per uneaten piece applies, so pace yourself!

How we got started and our goal

SourAji was founded by Xu Lu and Jake Weng with one wild idea: make omakase as thrilling as karaoke night. Our name reflects our philosophy: balancing the traditional “sour” elements of authentic Japanese cuisine with the innovative “aji” (flavor) that comes from fearless creativity. This fusion creates an experience that’s both deeply rooted in tradition and boldly forward-thinking.

Within months of opening, its provocative, no-rules format earned widespread attention: diners attempted Sushi‑zilla quantities (up to 122 pieces in one sitting!), and SourAji expanded to a second location in Chelsea due to high demand.
