SourAji was born in the heart of New York City, founded by visionaries Xu Lu and Jake Weng who sought to reimagine traditional omakase through energy, creativity, and accessibility. The concept? Start with a carefully curated 14-course tasting, then turn the evening into a lively, sake-fueled sushi party—complete with unlimited nigiri rounds and bold flavors.

Our name blends two inspirations: “sour,” a nod to the clean, acidic balance in traditional Japanese cuisine, and “aji,” meaning “taste” or “flavor.” Together, SourAji represents a fusion of classic techniques and fearless modern flair. What started as a bold East Village experiment has become one of NYC’s most exciting culinary experiences—earning a cult following, viral buzz, and a second location in Chelsea.
